I think this represents a breakthrough in #tortilla technology! You are looking at a tortilla made of 100% BLUE Corn! It was allowed to catch a wild yeast and ferment for one month with additional #nixtamalized BLUE corn added to “feed” the starter. The acid produced by the fermentation affected the #anthocyanin and turned it #PINK. Flavor is nutty blue corn up front followed by distinct sourdough bread on the back palate.
