Fancy a drink with dinner? When you sit down to a great meal do you reach for a cork-screw or a bar blade? Whatever your default answer is, The Tasting Room and The Ladies of Craft Beer are looking to broaden your horizons.

On Monday, November 7th Tasting room Chef Steve Marques will challenge Sommlier Gary Lapuyade and Cicerone Will Sandifer to pair drinks for a five course fall menu. I had the opportunity to preview the Grapes Vs. Grains menu and pairings last Sunday and the clear winner will be the guests attending.

I love beer can chicken… It’s unorthodox grilling technique results in some of the most moist meat I’ve ever had. Also, I love that we get to combine steaming with grilling… two cooking methods that are almost contradictory by nature.

Here’s a simple recipe that will make you the star of any summer cookout.

I wasn’t going to write a blog post tonight… I planned on cooking a simple dinner and getting some work done. A trip to the grocery store on my way home set into action a course of events that would change my plans… and possibly my life.

I like Chicken. I like waffles. I LOVE the combination of the two on one plate. The perfect forkful`– a balance of sweet, hot, crispy, salty… like American “Thai/Vietnamese” food.

So here’s a recipe… It’s the best version of this “classic” combo I’ve ever made… I dedicate it to Richard Blais who I was rooting on in the finale of Top Chef All stars while eating it tonight.

Throw away your favorite frosty beer mug… it’s doing your beer a dis-service… Trust me. Don’t trust me? Let me explain.

St. Arnolds is my favorite brewery… It’s the oldest craft brewery in Texas. I love the fact for that $7 you can visit the brewery, get a souvenir glass, try at least 4 craft beers, tour the brewery, and on many days meet and talk to the owner. One of the best $7 experiences that can be had in Houston!

72hr Sous Vide Brisket…Brined overnight and cooked 63.7 for about 75hrs. REALLY GOOD! served it with 63.7 Sous Vide Egg, Brown Gravy and steamed rice. (My Sous Vide version of the Hawaiian favorite “Loco Moco“) Shout out to Eleanor!

3.20.10–Secret Family Recipe.

This is a dish my Grandpa Schultz still makes…traditional Polish recipe…

Egg Foo Young.

Recipe:

  • Your left over chineese food from the night before (at least 2 different entrees, including rice)
  • Eggs
  • Green Onions

Mix all that shit together, and cook in frying pan.

BTW- That Morimoto Black Obi Soba Ale from Rouge Brewery is the shit!
