In my early days of traveling for work, I’d often find myself at some crappy bar and grill (one of many chains that all serve the same terrible food) debating between ordering wings or ribs… about a year ago I came across an idea in the comment section of a web blog. In fact, it was this blog post… one of the BEST Blog posts of all time! The idea was to take chicken skin, wrap it around a rib, fry it, and toss in buffalo sauce.
Last night I had the pleasure of attending the Young Texans Against Cancer “Kiss My Grits” cook off. I have to thanks my new friend Mr. Jay Ducote from biteandbooze.com for showing me some AMAZING hospitality in my own city. Kiss My Grits was hosted by Winter Street Studios in Houston and featured eleven local chefs and their innovative approach to Grits. Mr. Ducote came in from Baton Rouge, LA to be a judge for the event and invited me as his “+1” even though I forewarned him that I was not putting out.
It’s a late night of drinking… who dosen’t like that? I had a great time at Red Bull Music Academy listening to Questlove of The Roots band (rumor has it Jimmy Fallon was also in the house) but he didn’t introduce himself… RUDE. Also, Houston’s own Bun B was present. Ain’t no party like a Red Bull Party:)
So a lot to catch up on:
72hr Sous Vide Brisket…Brined overnight and cooked 63.7 for about 75hrs. REALLY GOOD! served it with 63.7 Sous Vide Egg, Brown Gravy and steamed rice. (My Sous Vide version of the Hawaiian favorite “Loco Moco“) Shout out to Eleanor!
More Red bull Leithin foam and vodka shots.
Did the brewery tour at St. Arnolds. Really impressive that the owner takes the time to personally give the tours. Fun times, good beer, and a great Texas company!

Red Bull Gave Me Wiiings
Grilled Chicken Drumettes, with Red Bull – Habenero “Buffalo” Sauce.
These came out REALLY good…they’ll definitely go on my upcoming “Red Bull Tasting Menu”.
8oz Red Bull
1-2 Habenero Pepper
2 TBLSPN Butter
1 TBLSPN Chili-Garlic Sauce.
Cut small slits into the Habenero pepper and put in a small pot with Red Bull. Bring it to a boil, then lower heat and simmer for 20 minutes. Bring the liquid back to a boil until it reduces to 1/3 the original volume. Add the chili-garlic sauce and butter, wisk and dress the wings while they’re still hot.
Ain’t No Party Like a Red Bull Party…
