Uni Sabayon.

Here’s a super simple sauce that I first encountered at my stage at Graham Elliot. I didn’t remember the exact recipe that the team at GE used but the technique was what was important.

Super easy to do in your Vitamix.

Ingredients
4 medium grapefruit, juiced.
1 stick butter, cut into tablespoon sized pieces
3 large egg yolks
1 small tray of Uni
Salt.

Technique
Place the yolks and grapefruit juice in you blender, ramp the speed up to medium.

Add the butter piece by piece until fully incorporated.

Ramp the blender up to high and add the uni in thirds. Let the machine run until the sides of the carafe are slightly warm, about 2 minutes. Season to taste with salt.

If using a Vitamix you can serve the sauce immediately with pasta or fish. If using a lesser blender make sure to pass the sauce through a fine tammis.
